Discernment About Science
Do you ever get tired of the bouncing ball about what's healthy or not healthy to eat? My poor Mom. I wish I could go back in time and whisper to her, 'it’s ok, have a little butter.' But no. And all to feed the ego of Ancel Keys. The man demonized saturated fat for decades, cherry-picked his data across seven countries when he had data from twenty-two, and my mother ate margarine.
In the long run, it seems that science does temper its own worst excesses, but there is so much arrogance along the way. Here, I make every effort to be as discerning about the science as I am about the way my clavicle rotates when I raise my arm.
